About The Role

To establish, review and execute control policies and procedures for Hospitality. To implement systems, policies and procedures for effective and accurate inventory, recipe creation and cost control at all levels within Costs of Goods Sold.

What You\xe2\x80\x99ll Be Doing

Functional Roles and Responsibilities

  • Prepare the costing for all Food, Beverage and Retail products in FMC (Fidelio Micros Control).
  • Checking daily Sales Symphony \xe2\x80\x93 FMC \xe2\x80\x93 Microsoft Strategy and informing IT of discrepancies.
  • Checking daily invoice booking consolidation by Stores. Identifying wrong invoice booking and fluctuations in pricing.
  • Monitor and ensures Discounts are as per Al Tayer Insignia approved Policies & Procedures.
  • Ensure programming of Symphony (POS) for additions/modifications of menus is completed by liaising with IT
  • To liaise with Purchasing Department on any supply or pricing issues.
  • Establish the daily and monthly Food & Beverage & Retail costs per Store.
  • Prepared to create daily, weekly and monthly flash reports for Food, Beverage and Retail costs.
  • Weekly purchase reports for all Stores.
  • Weekly Wastage reports for all Stores.
  • Weekly Sales mix for all Stores.
  • Weekly review of Hospitality Staff Discounts, Manager Meals and Voids.
  • Review prices changes and discrepancies weekly and update in FMC.
  • Creating and updating Discounts on POS, based on approved Al Tayer Insignia Policies.
  • Create monthly Discounts report, identifying discounts out of date and other discrepancies.
  • Monthly Inventory Variance Reports for all Stores.
  • Spot checks on month-end inventory at various Stores.
  • Support Finance Department in supply required financials for Store P&Ls.
People Management Roles and Responsibilities

  • Provide leadership and direction to subordinates towards the achievement of goals and objectives.
  • Guide and motivate subordinates to enhance performance and produce quality work, and ensure
About You

Education/Certification and Continued Education

  • Graduate in any discipline
Years of Experience

  • Minimum of 5-6 years relevant experience in inventory management of Hospitality, FMCG or retail
Knowledge and Skills

  • Proven track record in the field of Cost Control
  • Experience or working with international Principals
  • Computer Literate
  • Planning and organisational skills
  • Excellent communication and negotiation skills
Languages

  • Fluent in English. Arabic also highly desirable
